The Kayanoya Shop Design with Wooden Barrels Hanging from the Ceiling

Kayanoya originates in Kuhara Shoyu, Kyushu, a soy sauce manufacturer whose history dates back more than 120 years. The Kayanoya Shop designed by KENGO KUMA & ASSOCIATES in Nihonbashi is the reproduction of a traditional warehouse which they visited in Kyushu.

Wooden barrels hanging from the ceiling are the key point of this design. All the barrels used for traditional Shoyu-making are big and strong. Koji Buta, a special wooden tray used to prepare Koji for Shoyu, is used as furniture to display the products. (Koji is steamed rice/ barley injected with mold spores and fermented).

All cedar materials are from Kyushu, and the barrels and trays were produced by local craftspeople.
